Sponge

  • 2 large eggs (at room temperature)
  • 1 cup granulated sugar (200 g)
  • 2 teaspoons vanilla extract
  • 1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon Morton for the base recipe)
  • 1 teaspoon baking powder
  • 1 cup bleached all-purpose flour (125 g)
  • 1/2 cup whole milk
  • 6 tablespoons unsalted butter (cut into 1-inch pieces)

Filling

  • 1/3 cup raspberry or strawberry jam
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon Morton for the base recipe; for jam)
  • 1 cup heavy cream
  • 5 teaspoons granulated sugar
  • 1 tablespoon instant vanilla pudding mix
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon Morton for the base recipe; for cream)

To finish

  • powdered sugar (for dusting)

Build the air before adding flour

The long egg-and-sugar whisking creates the sponge structure. Keep the mixer low for the remaining additions and finish by folding any unmixed batter from the bottom of the bowl.

At the table

Serve in modest wedges with tea or coffee. Add the powdered sugar close to serving for a fresh finish.

The cooking plan

How to make Victoria-Style Sponge with Jam & Vanilla Cream.

  1. Heat the oven to 350°F with a middle rack. Line the bottoms of two 8-inch round cake pans with parchment; leave the pans ungreased.

  2. With an electric mixer and whisk attachment, beat the eggs, cake sugar, vanilla and cake salt for 10–15 minutes, until very pale and fluffy, about tripled in volume. The mixture should fall in a ribbon.

  3. On low speed, mix in the baking powder for about 1 minute. Add the flour and mix on low for about 1 minute; the batter will thicken.

  4. Meanwhile, warm the milk and butter in a small saucepan over medium heat for about 4 minutes, until the butter melts and the milk steams without boiling. With the mixer on low, gradually pour into the batter and mix for about 2 minutes. Fold with a spatula to make sure the batter is even.

  5. Divide between the pans, about 325 g per pan, and bake for 20–25 minutes, until golden and springy to a gentle touch. Cool in the pans for 10 minutes, then turn out onto racks, remove parchment and cool completely, about 1 hour.

  6. Stir the jam, lemon juice and measured jam salt together. In a separate bowl, beat the cream, 5 teaspoons sugar, pudding mix, vanilla and measured cream salt on medium speed for about 4 minutes, until medium-firm peaks form.

  7. Set one cake layer on a plate. Spread the jam over it, leaving a 1/4-inch border, then spread the cream to the edge. Put the second layer on top, upside down for a flat surface. Dust with powdered sugar and serve.

  • 1/2 cup olive oil (plus more for greasing)
  • 1 cup blanched almond flour (100 g; almond meal also works)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1 cup packed light brown sugar (200 g)
  • 1/2 cup Dutch-process cocoa powder (40 g)
  • 2 teaspoons vanilla extract
  • 1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon Morton for the base recipe)
  • 1/4 cup room-temperature water
  • 2 large eggs
  • 1 cup semisweet chocolate chips (170 g; about 50% cacao)

Tahini hot fudge

  • 1/4 cup packed light brown sugar (50 g)
  • 2 tablespoons Dutch-process cocoa powder
  • 3/4 cup water
  • 1/2 cup semisweet chocolate chips (85 g)
  • 1/3 cup tahini (75 g; stir well before measuring)
  • 1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon Morton for the base recipe)
  • 1 teaspoon vanilla extract

To serve

  • ice cream (optional, for serving)
  • flaky sea salt (to finish)

Give the fudge a few minutes

The sauce looks loose while hot. A short rest lets the melted chocolate and tahini thicken it into a spoonable topping.

At the table

Spoon into small bowls while warm, with ice cream and fudge passed at the table.

The cooking plan

How to make Chocolate Skillet Cake with Tahini Hot Fudge.

  1. Heat the oven to 350°F with a rack in the middle. Oil a 9-inch ovenproof skillet. Stir the almond flour, cornstarch and baking powder together in a small bowl.

  2. In a larger bowl, whisk the cake brown sugar, cocoa, vanilla, salt, olive oil and 1/4 cup water until smooth. Whisk in the eggs, then fold in the dry mixture and chocolate chips just until combined.

  3. Scrape into the skillet and smooth the top. Bake for 20–30 minutes, until puffed and set, with no wet batter remaining in the center.

  4. For the fudge, whisk its brown sugar, cocoa and 3/4 cup water in a small saucepan. Bring to a boil, whisking to dissolve the sugar. Remove from the heat and stir in the chocolate chips until melted.

  5. Stir the tahini, fudge salt and vanilla into the sauce. Let stand for 10–15 minutes to thicken slightly. Serve the cake warm with the fudge, ice cream if wanted, and a little flaky salt.

Bring it to the table

About this recipe.

Quickly wilted spinach with golden garlic and a tangy crème fraîche finish.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 2 tablespoons extra-virgin olive oil
  • 6 garlic cloves (thinly sliced)
  • 10 oz spinach (washed and trimmed; or 2 medium bunches for the base recipe)
  • kosher salt (to taste)
  • freshly ground black pepper (to taste)
  • 1/2 cup crème fraîche

Stop while the leaves still have texture

Add the greens in stages so they fit the pan. Once they are mostly wilted, the warm skillet is enough to bring the crème fraîche into the leaves.

At the table

Serve promptly as a side dish, spooning any creamy pan juices over the greens.

The cooking plan

How to make Garlic Spinach with Crème Fraîche.

  1. Warm the olive oil in a large skillet over medium heat. Cook the sliced garlic for about 3 minutes, stirring occasionally, until fragrant and just golden at the edges.

  2. Raise the heat to medium-high. Add the spinach a handful at a time, stirring and letting each addition wilt slightly before adding more. Season with salt and pepper and cook for about 1 minute, until mostly wilted.

  3. Remove from the heat and stir in the crème fraîche until the leaves are coated. Taste and adjust the seasoning, then serve.

About this recipe.

Spaghetti tossed in a silky butter sauce with preserved lemon, its brine and Parmesan.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

  • 12 oz spaghetti
  • kosher salt (for pasta water)
  • 1/2 cup unsalted butter (1 stick)
  • 1/4 cup finely chopped preserved lemon (seeds removed)
  • 2 tablespoons preserved lemon brine
  • freshly ground black pepper (to taste)
  • finely grated Parmesan (for serving)

Pasta water brings the sauce together

The starchy water helps butter and lemon form a coating rather than a pool in the bottom of the pan. Add it gradually and keep tossing.

At the table

Serve immediately in warm bowls with Parmesan at the table.

The cooking plan

How to make Preserved Lemon Butter Spaghetti.

  1. Cook the spaghetti in boiling salted water until about 1 minute short of its package timing. Keep the pasta water available for the sauce.

  3. Use tongs to transfer the pasta to the skillet, letting a little water come with it. Add 1/2 cup cooking water, raise to medium heat and toss vigorously for about 2 minutes, until the sauce is glossy and the pasta is al dente. Add more cooking water 1/4 cup at a time as needed.
