About this recipe.

Rice noodles, snap peas, peppers and carrots in a coconut milk broth with red curry paste and lime. The heat depends on the curry paste, so begin with the smaller amount and adjust to taste.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 1 tbsp Coconut oil or vegetable oil
  • 1/4 Red onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 2–3 tbsp Thai red curry paste (start with 2 tbsp and adjust to taste)
  • 1/2 tsp Turmeric (optional)
  • 3 1/2 cups unsweetened canned coconut milk (not cream of coconut)
  • 2 cups vegetable broth (low-sodium)
  • 2 tbsp Soy sauce
  • 2 1/2 tsp Sugar
  • 7 oz Dry rice noodles (cook separately following package directions)
  • 1 cup Snap peas (fresh or frozen)
  • 4 Sweet red peppers (mini) (sliced)
  • 1 cup Carrots (matchstick)
  • 1 Lime (juiced)
  • ¼ cup Thai basil and/or cilantro (fresh, chopped, for finishing)

Choose your curry paste

Brands vary in heat and ingredients. Start with the smaller amount, then taste the broth before adding more. Check the label if avoiding fish or shellfish.

Cook the noodles separately

Rice noodle sizes need different cooking times. Prepare yours according to the package, then put them into bowls before ladling over the hot broth. This also makes leftovers easier to store separately.

The cooking plan

How to make Thai-Inspired Coconut Curry Noodle Soup.

  1. Slice the onion and mini peppers, trim and halve the snap peas if large, and cut the carrots into thin matchsticks. Mince the garlic. Have the coconut milk stirred and ready.

  2. Heat the oil in a large pot over medium heat. Cook the onion for 3–4 minutes until softened. Add the garlic, 2 tablespoons curry paste and optional turmeric; stir for 30–60 seconds without browning the garlic.

  3. Stir in the coconut milk, vegetable broth, soy sauce and sugar. Bring to a gentle simmer. Taste and add the extra tablespoon of curry paste only if you want more heat, stirring until dissolved.

  4. Meanwhile, prepare the rice noodles separately according to their package directions and drain. Add the snap peas, sliced peppers and carrots to the simmering broth and cook for 3–5 minutes until tender-crisp. Separate noodle preparation avoids overcooking thin noodles or undercooking thick ones.

  5. Take the broth off the heat. Stir in the lime juice and chopped herbs. Divide the noodles among four bowls and ladle the hot broth and vegetables over them. Serve promptly.

Notes

Corrected recipe identity: The saved draft was labeled black bean soup, but its ingredients and method contain coconut curry broth and rice noodles, with no black beans. This version names the dish to match its actual contents.
Coconut milk: Use unsweetened canned coconut milk, not sweetened cream of coconut or a thin carton beverage. Different brands vary in thickness; add a little water or broth if you prefer a lighter soup.
Diet and allergens: Red curry paste may contain shrimp or fish, and soy sauce often contains wheat. Check labels if you need a vegetarian, vegan or gluten-free meal. Soy is present in standard soy sauce.
Storage: Refrigerate broth and noodles separately promptly at 40°F or below and use within 3 days. Reheat leftovers to 165°F. Noodles absorb liquid during storage.

The cooking plan

How to make Baked Beef and Pork Meatballs with Fresh Herbs.

  1. Heat the oven to 400°F. Line two rimmed baking sheets with parchment rated for that temperature. Mix the breadcrumbs and milk in a large bowl and let stand for 5 minutes.

  2. Add the beef, pork, eggs, onion, garlic, fresh basil, parsley, oregano, Parmesan, salt and pepper to the soaked crumbs. Mix gently with clean hands until evenly combined. Do not taste the raw mixture.

  3. Form into evenly sized meatballs about 1½ inches across. Arrange with a little space between them on the prepared trays. The number depends on size; keep the size consistent so they cook evenly.

  4. Bake for 20–25 minutes, rotating the trays halfway through if needed, until browned and the center of several of the largest meatballs reaches 160°F on a food thermometer. Time alone and color are not reliable doneness tests; continue cooking if needed.

  5. Serve hot with separately prepared marinara and pasta, tuck into sandwiches, or offer as part of a meal. If adding sauce, use fully cooked meatballs and warm them briefly in the hot sauce before serving.

About this recipe.

Browned button mushrooms finished with garlic butter, a little teriyaki sauce and steak seasoning. A wide skillet helps the mushrooms brown instead of steam.

Garlic Butter Mushrooms with Teriyaki

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 1 lb Button Mushrooms
  • 1 tbsp Olive oil
  • 3 tbsp Unsalted butter (divided)
  • 1 tbsp Garlic (Minced)
  • 1 tbsp Teriyaki sauce
  • ½ tsp Steak seasoning (plus more to taste, if needed)

Give the mushrooms space

A wide skillet lets moisture escape so the mushrooms can brown. Dry them after cleaning and cook in batches if the pan is crowded.

Add garlic toward the end

Brown the mushrooms first, then lower the heat before adding the garlic and remaining butter. The teriyaki and steak seasoning provide salt, so taste before adding more.

The cooking plan

How to make Garlic Butter Mushrooms with Teriyaki.

  1. Wipe the mushrooms clean or rinse briefly, then dry well. Trim the stems and halve or quarter the mushrooms so the pieces are similar in size.

  2. Heat the olive oil and 1 tablespoon of the butter in a wide skillet over medium-high heat. Add the mushrooms in a single layer and cook for 7–10 minutes, turning occasionally, until browned and most released liquid has evaporated. Work in batches if the pan is crowded.

  3. Reduce the heat to medium-low. Add the remaining 2 tablespoons butter and the garlic. Stir for 30–60 seconds, just until fragrant; do not burn the garlic.

  4. Stir in the teriyaki sauce and steak seasoning. Cook for 1–2 minutes, stirring, until the mushrooms are glossy and tender. Taste before adding any extra seasoning, since both sauces can be salty.

  5. Serve hot as a side dish, or spoon over separately cooked steak, chicken or potatoes. Those serving additions are not included in the recipe quantities.

About this recipe.

Fluffy mashed potatoes with garlic, butter and warm milk. Add the milk gradually so you can stop at the texture you like.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 3 lbs Baking potatoes (russet potatoes, peeled and cut into even 1½-inch pieces)
  • 4 cloves Garlic (Minced.)
  • 1½ cups whole milk (up to this amount; add gradually as needed)
  • 3 tbsp Unsalted butter
  • Salt (to taste)
  • Black pepper (to taste)

Add the milk gradually

Potatoes vary in how much liquid they absorb. Warm the milk and butter together, then stir in a little at a time. You may not need it all to get a soft, fluffy mash.

Keep the mixing gentle

A masher or ricer gives you control without overworking the potatoes. Serve as a side dish, or use a measured amount in a cottage pie recipe. Those additional dishes are not included in the recipe below.

The cooking plan

How to make Simple Garlic Mashed Potatoes.

  1. Peel the potatoes and cut into evenly sized pieces, about 1½ inches across. Put them in a large saucepan with the garlic and enough cold water to cover by about an inch.

  2. Bring to a boil, then reduce to a steady simmer. Cook for about 20–25 minutes, or until the potatoes are easily pierced with a fork. Large pieces may take longer.

  3. While the potatoes cook, gently warm the milk and butter in a small saucepan until the butter melts. Do not boil.

  4. Drain the potatoes and garlic well. Return to the warm pot over low heat for about 1 minute, stirring gently, to release excess moisture. Remove from the heat and mash with a potato masher or ricer.

  5. Stir in the warm milk mixture a little at a time, using only as much as needed. Season with salt and pepper. Avoid a blender or food processor and stop mixing once smooth; overworking can make potatoes gluey. Serve warm.

About this recipe.

A meat-forward pasta sauce with beef, pancetta, finely diced vegetables, tomato and a little milk. A gentle simmer gives the sauce time to become tender and thick.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 10 oz Ground beef (80/20)
  • 5 oz Pancetta (finely chopped)
  • 1 1/4 cup Crushed tomato
  • 1.76 oz Carrot (about 50 g, finely diced)
  • 1.76 oz Celery (about 50 g, finely diced)
  • 1.76 oz Yellow Onion (about 50 g, finely diced)
  • 1/2 cup White wine (dry white wine)
  • 1/2 cup Milk (whole milk)
  • 1 1/2 cup Beef stock (low-sodium, divided; add as needed)
  • 1 tbsp Extra virgin olive oil
  • Salt (to taste)
  • Black pepper (to taste)

A sauce that rewards a slow simmer

Start by softening the vegetables, then brown the beef before adding the liquid. Keep the sauce moving with an occasional stir and add stock only as needed; the goal is a thick, spoonable meat sauce.

Plan the rest of the meal

Serve with separately cooked pasta, such as tagliatelle, or use a measured amount in a lasagna recipe. Pasta and side dishes are not included in the quantities below. This version contains both wine and milk.

The cooking plan

How to make Slow-Simmered Beef and Pancetta Bolognese.

  1. Finely dice the carrot, celery and onion. Finely chop the pancetta. Have the remaining ingredients measured before cooking.

  2. Warm the olive oil in a heavy saucepan over medium-low heat. Add the pancetta and cook for about 5 minutes, stirring. Add the carrot, celery and onion and cook for 6–8 minutes, until softened without dark browning.

  3. Increase to medium heat and add the ground beef. Break it into small pieces and cook for about 8–10 minutes, stirring, until browned and cooked through. Ground beef should reach 160°F.

  4. Pour in the wine and simmer for 3–5 minutes, scraping the bottom of the pan. Stir in the crushed tomatoes and 1 cup of the stock. Reserve the remaining ½ cup of stock to adjust the consistency.

  5. Bring to a gentle simmer, then turn the heat to low and partially cover. Cook for about 1 hour 40 minutes, stirring and scraping the bottom occasionally. Add reserved stock a little at a time if the sauce becomes dry. The sauce should simmer softly rather than boil hard.

  6. Stir in the milk and simmer gently for another 20 minutes, until the meat is tender and the sauce is thick but spoonable. Taste and season with salt and pepper. Serve with separately cooked pasta, or cool promptly for another meal.

Questions about this recipe.

Why does this Bolognese have milk?

Milk is part of this recipe’s finish. After the beef, pancetta, vegetables and tomato have simmered slowly, stir in the milk and cook gently for another 20 minutes until the sauce is thick but spoonable.

How do I keep the sauce from drying out?

Use low heat and keep the pan partially covered. Stir and scrape the bottom occasionally, adding the reserved half cup of stock a little at a time only as needed. The sauce should simmer softly rather than boil hard.

Is pasta included in the recipe quantities?

This recipe makes the sauce. Cook your chosen pasta separately, then combine it with the Bolognese for serving.

See the ingredient checklist
  • 1 1/2 cups Wild rice (dry, plain wild rice; follow package water and cooking directions)
  • 2 cups Cooked shrimp (fully cooked, peeled, deveined and chilled; tails removed)
  • 1/2 cup Broccoli (finely chopped)
  • 1/2 cup Chopped cauliflower (finely chopped)
  • 1/2 cup Gruyère cheese (small cubes)
  • 1/4 cup Red pepper (Diced)
  • 1/4 cup Green pepper (Diced)
  • 1/4 cup Italian dressing
  • 8 Lettuce leaves (washed and dried, for serving)

Cool the rice before mixing

Wild rice brings a chewy texture to this chilled salad. Cook it according to its package, then cool it promptly in a shallow container. Combine it with the shrimp and cheese only after the rice is cold.

A little crunch in every bite

Finely chopped broccoli, cauliflower and bell peppers balance the rice and shrimp. Dress the salad just before serving over lettuce. Choose fully cooked, chilled shrimp to keep preparation straightforward.

The cooking plan

How to make Wild Rice and Shrimp Salad with Crunchy Vegetables.

  1. Cook the dry wild rice in water according to its package directions, usually 45–60 minutes, until tender with a pleasant chew. Use the package water ratio and drain any excess liquid. Rice blends may need different amounts of water and timing.

  2. Spread the cooked rice in a clean shallow container and refrigerate promptly. Allow it to become cold before combining with the shrimp and cheese; about 30 minutes is an estimate and deeper containers may take longer. Do not leave rice on the counter to cool for hours.

  3. Use fully cooked, chilled shrimp. Peel, devein and remove tails if needed, then chop into bite-size pieces. Finely chop the broccoli and cauliflower, dice the bell peppers and cube the cheese.

  4. Gently mix the cold rice, shrimp, broccoli, cauliflower, cheese and peppers in a large bowl. Cover and refrigerate at 40°F or below for at least 1 hour.

  5. Toss with the Italian dressing just before serving. Divide the lettuce among eight plates and spoon the salad on top. Taste before adding extra dressing or seasoning.

Notes

Timing: Allow about 60 minutes to cook plain wild rice, 30 minutes to cool it and 1 hour to chill the combined salad. Cooling time varies; the rice must be cold before adding the shrimp and cheese.
Ingredients: The shrimp is already cooked and chilled. Its cooking time is not included. Cut the raw broccoli and cauliflower small so their crunch is pleasant.
Storage: Refrigerate promptly in shallow containers and keep at 40°F or below. Keep the finished salad chilled and use within 1 day for best quality. Do not leave out longer than 2 hours, or 1 hour above 90°F. Contains shellfish and milk; check dressing labels for other allergens.
