  • 2 Roma Tomatoes
  • 1 Large Yellow Onion fine dice
  • 1 Anahiem Pepper
  • ¼ tsp Ground Cinnamon
  • tsp Ground Cloves
  • 2 tsp Kosher Salt
  • 3 Cloves Garlic minced
  • l lbs Chicken Breast boneless & skinless
  • 8 Cups Chicken Broth
  • ½ Cup Lime Juice fresh squeezed
For Topping
  • 1 Corn Tortillas cut into strips and fry
  • 1 Avocado diced

Method
 

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped tomatoes, onion, and bell peppers. Cook, stirring occasionally, until the vegetables are softened and slightly caramelized.
