Method
 

  1. Preheat your oven to 400°F. Now, let's get that cauliflower ready! First, trim off the bottom of the stem. Next, peel away those outer leaves. Cut out the stem from the center, being careful not to break apart the florets. Rinse the cauliflower head and pat it dry.

  2. Place the whole cauliflower head in a large pot. Pour enough stock over the cauliflower to completely submerge it. Tuck the sprigs of fresh thyme and the bay leaf into the stock around the cauliflower. Place the pot over medium-high heat and bring the stock to a rolling boil. Once boiling, reduce the heat to low and simmer gently for 12 minutes.

  3. Once the cauliflower is tender, carefully remove it from the pot and drain any excess stock. Place the cauliflower in a cast-iron skillet or another oven-safe pan. Then, drizzle the top of the cauliflower with melted butter, ensuring it coats the surface evenly. Sprinkle with fresh thyme leaves and freshly ground black pepper.

Method
 

Boil The Cauliflower
  1. Fill a large pot with water, add the cauliflower, and bring to a boil; boil for five minutes, then drain. The goal is that you want the cauliflower cooked, but still firm. The final cooking will take place in the oven.
    Transfer the cauliflower to a large bowl.
    At this point, preheat your oven to 400℉.
Prep The Cheese Sauce
  1. Take the cheese sauce that you made from the cheese sauce recipe, and season it with the salt, paprika, and cayenne. I find that mixing this while you are mixing the cauliflower works best. This allows you the ability to taste it with the cauliflower and adjust the seasonings as needed.
Place In Baking Dish
  1. After the cauliflower and cheese is thoroughly mixed, pour this into your 8x8 baking dish.
    Be sure to smooth out the top of the dish using your spatula, and get all of the cheese sauce out of the bowl.
    Fill in any holes or gaps in the dish.
    Once the baking dish is full, gently shake the panko crumbs over the top. Be sure to cover evenly and cover all the bare spots.
Bake
  1. Place in the oven and bake for 10-15 minutes. The top should be turning golden and the sides may be browned. That is perfect.
