Fill a large pot with water, add the cauliflower, and bring to a boil; boil for five minutes, then drain. The goal is that you want the cauliflower cooked, but still firm. The final cooking will take place in the oven.Transfer the cauliflower to a large bowl.At this point, preheat your oven to 400℉.
Prep The Cheese Sauce
Take the cheese sauce that you made from the cheese sauce recipe, and season it with the salt, paprika, and cayenne. I find that mixing this while you are mixing the cauliflower works best. This allows you the ability to taste it with the cauliflower and adjust the seasonings as needed.
Place In Baking Dish
After the cauliflower and cheese is thoroughly mixed, pour this into your 8x8 baking dish.Be sure to smooth out the top of the dish using your spatula, and get all of the cheese sauce out of the bowl.Fill in any holes or gaps in the dish.Once the baking dish is full, gently shake the panko crumbs over the top. Be sure to cover evenly and cover all the bare spots.
Bake
Place in the oven and bake for 10-15 minutes. The top should be turning golden and the sides may be browned. That is perfect.
