  • 2 1/2 cups turkey pan drippings, strained
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 tsp chopped fresh thyme
  • 1 tbsp chopped fresh parsley
  • kosher salt and black pepper, to taste

Before you cook

How to make Turkey Gravy with Pan Drippings and Thyme

  1. Strain the turkey drippings through a fine sieve and measure out 2 1/2 cups.

  2. Melt the butter over medium heat. Whisk in the flour and thyme and cook for about 1 minute, until the mixture takes on a little color.

  3. Add the drippings gradually while whisking. Bring the gravy to a boil, lower the heat and simmer for 5 to 10 minutes, whisking until it thickens.

  4. Stir in the parsley. Taste and season with salt and pepper.
