Use thin, even cutlets

Even thickness helps the chicken cook consistently. Check each piece with a food thermometer, then keep the cream sauce at a gentle simmer and stir the Parmesan in over low heat.

The cooking plan

How to make Garlic Tuscan Chicken.

  1. Heat the olive oil in a large skillet over medium-high heat. Pat the cutlets dry and cook in a single layer, in batches if needed, about 3–5 minutes per side. Cook until each thickest part reaches 165°F (74°C) on a food thermometer; clear juices are not a reliable test. Transfer to a clean plate.

  2. Reduce the heat to medium-low. Add the heavy cream, chicken broth, garlic powder, and Italian seasoning, scraping up the browned bits. Bring to a gentle simmer, stirring, for about 3–5 minutes until slightly reduced. Avoid a hard boil.

  3. Reduce the heat to low and stir in the Parmesan a little at a time until melted. Add the chopped spinach and drained sun-dried tomatoes. Stir for 1–2 minutes until the spinach wilts.

  4. Return the cooked chicken and its plate juices to the skillet. Spoon sauce over the cutlets and warm gently for 1–2 minutes. Serve with the sauce; optional cooked pasta or rice is not included in the recipe timing.

Big-Batch Marinara Sauce

Big-Batch Marinara Sauce

A pot of tomato sauce quietly simmering on the stove can become several meals. This marinara starts with canned plum tomatoes and finishes with fresh basil, giving you a flexible base for pasta and bakes.

Bring it to the table

About this recipe.

A slow-simmered tomato sauce with onion, garlic and fresh basil. Make a large pot for pasta, lasagna or pizza, then refrigerate or freeze the extra sauce in meal-sized portions.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 1 large yellow onion (finely diced)
  • 4 cloves garlic (minced)
  • 4 28-oz cans whole plum tomatoes (with their juices; 112 oz total)
  • ½ cup fresh basil leaves (loosely packed, torn)
  • ¼ cup olive oil
  • 1 tsp salt (start here and adjust after simmering)
  • ½ tsp black pepper (or to taste)

Make one pot, plan several meals

This is a large batch made with four 28-ounce cans of tomatoes. Let it reduce gently, stirring the bottom of the pot occasionally. The finished volume varies, so measure what you need for another recipe before storing the rest in meal-sized portions.

Recipes to use it in

Use the same sauce for your next pasta dinner. For pizza, simmer it to a thicker consistency so the topping does not make the crust soggy.

The cooking plan

How to make Big-Batch Marinara Sauce.

  1. Heat the olive oil in a large, heavy pot over medium heat. Add the onion and cook for 6–8 minutes, stirring, until softened. Add the garlic and stir for about 30 seconds without browning it.

  2. Carefully pour in all four cans of tomatoes and their juices. Break up the tomatoes with a spoon or potato masher. Stir in the salt and pepper.

  3. Bring just to a simmer. Reduce the heat to low and partially cover the pot. Cook for about 2 to 2½ hours, stirring and scraping the bottom occasionally, until the sauce has thickened to your liking. Add a splash of water if it becomes too thick before the flavor develops.

  4. Remove the pot from the heat and stir in the basil. Taste and adjust the salt and pepper after the sauce has reduced. Leave chunky, or carefully use an immersion blender with its head submerged for a smoother sauce; avoid splashing hot sauce.

  5. Use with pasta, lasagna or pizza. For leftovers, divide into shallow containers so the sauce cools promptly, then refrigerate or freeze in useful portions.

Notes

Batch size: Starts with four 28-ounce cans of tomatoes. The finished volume depends on the tomatoes, pot and reduction; measure your batch if a second recipe calls for a specific amount. Twelve sauce portions is a planning estimate, not a measured cup yield.
Storage: Refrigerate in covered containers within 2 hours (1 hour above 90°F), at 40°F or below. Use within 3 days or freeze for up to 3 months for best quality. Reheat leftovers to 165°F. This recipe is not a tested canning formula.
Use it in: zucchini lasagna or cauliflower-crust pizza.

Creamy Garlic Alfredo Sauce

Creamy Garlic Alfredo Sauce

Bring it to the table

About this recipe.

A rich cream and Parmesan sauce with gently cooked garlic. Keep the heat low, then stir in the cheese off the heat for a smooth sauce to toss with hot pasta.

Creamy Garlic Alfredo Sauce

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 6 tbsp unsalted butter
  • 1 tsp garlic (finely minced)
  • 1½ cups heavy cream
  • 6½ oz Parmesan cheese (finely grated from a block)
  • salt (to taste; the Parmesan is already salty)
  • ½ tsp black pepper (or to taste)
  • ½ tsp dried thyme (optional)
  • warm pasta water (as needed to loosen the sauce)

A smooth finish without the guesswork

Grate the Parmesan finely before you begin. Keep some warm pasta water nearby so you can loosen the sauce just before serving. Optional thyme adds a light herbal note; leave it out for a simpler garlic and cheese sauce.

How to use it

Toss with freshly cooked fettuccine or spoon over cooked vegetables. Cook any chicken, shrimp or other additions separately before combining them with the sauce. The recipe makes four generous pasta portions rather than four cups of sauce.

The cooking plan

How to make Creamy Garlic Alfredo Sauce.

  1. Finely grate the Parmesan. If serving with pasta, cook the pasta separately and reserve a mug of its cooking water before draining.

  2. Melt the butter in a medium saucepan over medium-low heat. Add the garlic and optional thyme; stir for 30–60 seconds, just until fragrant. Do not let the garlic brown.

  3. Stir in the heavy cream. Bring to a gentle simmer over medium-low heat, then reduce to low and cook for 3–5 minutes, stirring often. Avoid a hard boil.

  4. Take the pan off the heat. Add the Parmesan in several small handfuls, stirring until each addition melts before adding more. If needed, return briefly to very low heat while stirring.

  5. Stir in the pepper. Taste before adding salt. Loosen with warm pasta water a tablespoon at a time until the sauce coats a spoon, then toss with hot pasta and serve immediately. The sauce thickens as it stands.
