  • 1 small head green cabbage, about 10 oz
  • 3 tbsp vegetable oil
  • 2 1/2 tsp kosher salt, divided
  • black pepper, to taste
  • 1 lb ground beef, 80% lean
  • 4 slices American cheese
  • ketchup, mustard, cooked bacon, dill pickles and chopped red onion, for serving

Before you cook

Cut the cabbage rounds evenly so they soften at the same pace.

How to make Roasted Cabbage Steak Cheeseburgers

  1. Heat the oven to 425°F. Trim the top of the cabbage, then cut four 1/2-inch rounds, discarding the root end.

  2. Brush both sides of the rounds with oil and season with 1 1/2 teaspoons salt and pepper. Roast on a baking sheet for 20 to 25 minutes, until tender.

  3. Form the beef into four flat patties and season with the remaining salt and pepper. Set a patty on each cabbage round and roast until the beef is cooked through and the cabbage edges are browned.

  4. Top with the cheese and return to the oven for about a minute, until melted.
