Cake

  • nonstick vegetable oil spray (for the pan)
  • 2 cups granulated sugar (400 g)
  • 1 3/4 cups all-purpose flour (219 g)
  • 1 teaspoon baking soda
  • 3/4 cup Dutch-process cocoa powder (64 g)
  • 3/4 cup vegetable oil
  • 1 cup hot water
  • 2 large eggs
  • 3/4 cup well-shaken buttermilk
  • 2 teaspoons Diamond Crystal kosher salt (or 1 1/4 teaspoons Morton for the base recipe)
  • 2 teaspoons vanilla extract

Frosting

  • 1/4 cup unsalted butter (for browning)
  • 1/3 cup nonfat dry milk powder (32 g)
  • 2/3 cup heavy cream
  • 1 cup unsalted butter (at room temperature)
  • 2 1/2 teaspoons Diamond Crystal kosher salt (or 1 1/2 teaspoons Morton for the base recipe)
  • 1 teaspoon vanilla extract
  • 1 lb powdered sugar (453 g, sifted)

To finish

  • flaky sea salt (optional)
  • sprinkles (optional)

Cool both components before frosting

The cake needs to be completely cool, and the browned mixture should no longer be hot before it is beaten into the buttercream.

At the table

Cut into twelve squares, wiping the knife between cuts for neat frosting edges.

The cooking plan

How to make Chocolate Sheet Cake with Brown Butter Frosting.

  1. Heat the oven to 375°F with a middle rack. Line the bottom of a 13-by-9-inch metal pan with parchment and lightly coat the parchment and pan sides with spray. Whisk the granulated sugar, flour and baking soda in a bowl.

  2. In a larger bowl, whisk the cocoa, oil and hot water for about 30 seconds, until the cocoa is dispersed. Whisk in the eggs, buttermilk, cake salt and vanilla. Add the dry mixture and whisk just until smooth. Scrape into the pan.

  3. Bake for 25–30 minutes, until springy and a tester comes out with a few moist crumbs but no wet batter. Cool completely, about 1 hour, before frosting. The cake can stay in its pan.

  4. For the frosting, warm the separate 1/4 cup butter in a skillet over medium-low heat until foamy. Add the milk powder and stir continuously for about 5 minutes, until a dark nut-brown color. Remove from the heat and immediately stir in the cream to stop the browning. Stir vigorously until mostly smooth; small flecks are fine. Cool for about 30 minutes.

  5. Beat the room-temperature cup of butter with the frosting salt and vanilla on medium-high speed for about 1 minute, until creamy. Beat in half the powdered sugar, beginning on low speed. Add the cooled brown butter mixture and remaining sugar, then beat for about 2 minutes, until fluffy.

  6. Spread over the completely cool cake. Finish with optional flaky salt and sprinkles.

About this recipe.

A no-churn frozen yogurt-and-cream dessert with mango ribbons and chopped dark chocolate.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 3 medium ripe mangoes (peeled and coarsely chopped, about 4 cups)
  • 1/3 cup granulated sugar (67 g)
  • 1 tablespoon fresh lemon juice
  • kosher salt (a pinch for fruit and a generous pinch for cream mixture)
  • 2 teaspoons sumac
  • 1 cup sweetened condensed milk
  • 1/2 cup plain whole-milk Greek yogurt (or labneh)
  • 1/2 teaspoon vanilla extract
  • 1 oz bittersweet chocolate (finely chopped)
  • 2 cups heavy cream

Swirl without fully mixing

A few gentle passes create mango ribbons. Too much stirring blends the fruit completely into the cream.

At the table

Let the loaf soften just enough to scoop, then return the remaining dessert promptly to the freezer.

The cooking plan

How to make Mango-Sumac Yogurt Semifreddo.

  1. Cook the mango, sugar, lemon juice and a pinch of salt in a saucepan over medium heat for 15–18 minutes, stirring and mashing, until thick and jammy. Blend carefully until smooth, using an immersion blender or a blender rated for warm mixtures. Stir in the sumac and let cool.

  2. Whisk the condensed milk, yogurt, vanilla and a generous pinch of salt together. Stir in the chopped chocolate.

  3. Whip the cream to stiff peaks. Gently fold 1 cup whipped cream into the yogurt mixture to lighten it, then fold that mixture into the remaining whipped cream without beating out the air.

  4. Spread one-third of the cream mixture in a 9-by-5-inch loaf pan. Add one-third of the mango purée and swirl lightly. Repeat twice with the remaining cream and mango, keeping some distinct ribbons. Smooth the top and cover tightly.

  5. Freeze for at least 8 hours, until solid. Let stand at room temperature for about 10 minutes before scooping into bowls.

Notes

Makes 6–8 servings; the serving adjustment starts at 8.
For a plum variation, replace mango with 5 peeled chopped plums, about 3 1/2 cups, and replace sumac with 1/2 teaspoon black pepper for the base recipe.
For a raspberry variation, use 1 pound raspberries and 1 teaspoon ground cardamom instead of mango and sumac for the base recipe; the cooked raspberries can remain unblended.

About this recipe.

Creamy milk-based cocoa pops with an optional espresso boost.

Before you start

Gather your ingredients.

Check your pantry before you begin. Full quantities and serving adjustments are in the recipe card below.

See the ingredient checklist
  • 1 cup granulated sugar (200 g)
  • 3/4 cup unsweetened cocoa powder (63 g)
  • 2 tablespoons instant espresso powder (or extra unsweetened cocoa powder)
  • 2 tablespoons cornstarch (or potato starch)
  • 1/4 teaspoon kosher salt
  • 3 1/2 cups whole milk (divided)
  • 1 teaspoon vanilla extract

Make a smooth cocoa paste first

Adding a little milk before the rest helps disperse the cocoa and starch without lumps.

At the table

Unmold only the pops you plan to serve and keep the rest frozen.

The cooking plan

How to make Dark Cocoa & Espresso Ice Pops.

  1. Whisk the sugar, cocoa, espresso or extra cocoa, starch and salt in a saucepan. Gradually whisk in 1 cup milk to make a smooth paste, then whisk in the rest.

  2. Set over medium heat and bring to a simmer, whisking often. Switch to a heatproof spatula and stir along the bottom and sides for another 3–4 minutes, until thickened.

  3. Remove from the heat and stir in the vanilla. Cool for about 10 minutes, whisking occasionally to prevent a skin forming.

  4. Pour into ice-pop molds. Freeze for about 1 hour, until beginning to set, then insert sticks if your molds require it. Freeze for about 5 more hours, or until solid.

  5. Briefly run the outside of the molds under hot water and release the pops. Keep frozen until serving.

See the ingredient checklist

Crust

  • 6 oz gingersnap cookies
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon kosher salt
  • 5 tablespoons unsalted butter (melted)

Filling

  • 3/4 cup heavy cream
  • 16 oz cream cheese (at room temperature)
  • 1/2 cup sour cream
  • 1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon Morton for the base recipe)
  • 1 cup powdered sugar (110 g, sifted)
  • 1 2-inch piece ginger (peeled and finely grated)
  • 2 tablespoons fresh lime juice

Lime curd

  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup granulated sugar (100 g)
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon Morton for the base recipe)
  • 6 tablespoons unsalted butter (cut into pieces)

To finish

  • chopped candied ginger (for serving)
  • finely grated lime zest (for serving)

Chill the curd before topping

A cool curd layer keeps the filling underneath firm. Spread gently, then give the finished bars time to set before slicing.

At the table

Serve small frozen bars with candied ginger and fresh lime zest scattered over the top.

The cooking plan

How to make Ginger-Lime Frozen Cheesecake Bars.

  1. Line a 9-inch square pan with parchment, leaving overhang on two sides. Pulse the gingersnaps in a food processor to fine crumbs, about 2 cups. Pulse in the crust sugar and salt, then the melted butter until evenly damp. Press firmly across the pan bottom and freeze while preparing the filling.

  2. Whip the filling cream to stiff peaks. In another bowl, beat the cream cheese, sour cream, filling salt and sifted powdered sugar until smooth. Mix in the grated ginger and lime juice, then fold in the whipped cream. Spread evenly over the crust and freeze for about 2 hours, until set.

  3. Meanwhile, whisk the egg, yolk, curd sugar, lime juice and curd salt in a small saucepan. Cook over medium heat, whisking constantly, until the sugar dissolves, about 1 minute. Add the butter one piece at a time, whisking between additions.

  4. Continue whisking until the curd coats a spoon, allowing about 2–3 minutes once the butter is added and longer if needed. Check that the egg mixture reaches 160°F. Strain into a heatproof bowl, cool slightly, then cover directly against the surface and refrigerate for about 1 hour, until cool.

  5. Spread the cool curd over the firm cheesecake filling. Freeze for about 2 more hours, until gently set; the curd may remain softer than the filling.

  6. Run a knife along the unlined sides and lift out with the parchment. Cut into 12 bars, wiping the knife between cuts. Finish with candied ginger and lime zest. Keep frozen until serving.

  • 8 tablespoons strawberry jam
  • 8 tablespoons coarsely chopped honey-roasted peanuts
  • freeze-dried strawberries (optional, for decorating)
  • food-safe edible flowers or leaves (optional, sold for culinary use)

Build the dome from the smallest layer up

The cake takes the shape of the lined bowl. Filling the side gaps with strawberry cream keeps the layers supported and gives the outside a rounded surface once unmolded.

At the table

Chill until set, then slice with a clean sharp knife, wiping between cuts to show the layers.

The cooking plan

How to make Strawberry & Peanut Butter Dome Cake.

  1. Heat the oven to 350°F with racks in the upper and lower thirds. Line the bottoms of two 8-inch and two 9-inch round cake pans with parchment. Leave the pans ungreased. You also need a bowl about 10–11 inches across the top and 4–5 inches across the base for molding.

  2. Beat the egg whites, cake salt, cream of tartar and half the brown sugar with a stand mixer whisk on medium-low for about 30 seconds to break up the whites. Raise to medium-high and beat for 8–10 minutes, until glossy with medium peaks.

  3. In a separate large bowl, whisk the yolks and remaining brown sugar by hand for about 2 minutes, until pale and well mixed. Whisk in the oil, vanilla and water. Sift the cake flour and baking powder over the mixture and whisk until combined.

  4. Whisk one-quarter of the meringue into the yolk batter to lighten it. Fold in the rest in three additions, gently lifting from the bottom, until just a few pale streaks remain.

  5. Divide among the pans to about 3/4 inch deep: roughly 300 g in each 8-inch pan and 350 g in each 9-inch pan. Smooth gently and pass a chopstick through the batter a few times to release large bubbles. Bake for 15 minutes, then lower the oven to 325°F and bake another 15–18 minutes, until golden and springy; the smaller layers may finish first.

  6. Invert the pans onto wire racks and cool in the pans for about 1 hour. Turn upright, loosen the edges carefully, turn the cakes out and remove parchment.

  7. For the strawberry cream, pulse the freeze-dried strawberries, strawberry-cream sugar, salt and lemon zest in a food processor until finely ground. Add the cream cheese, 4 cups cream and vanilla. Process for about 2 minutes, scraping the bowl as needed, until thick and mousse-like. Transfer to a bowl, cover and refrigerate. Clean and dry the processor.

  8. Process the peanut butter filling ingredients for about 1 minute, scraping as needed, until thick and creamy. Transfer to a separate bowl.

  9. Line the molding bowl with plastic wrap, leaving about 6 inches of overhang. Cut a round from one 8-inch cake to fit the bowl base, about 4–5 inches. Cut a 6-inch round from one 9-inch cake. Leave the other two layers whole. Put 2 1/2 cups strawberry cream into a piping bag or sturdy food bag with a 1/4-inch corner opening.

  10. Put the smallest cake round in the bowl base. Spread with 2 tablespoons jam, about 1/4 cup peanut butter filling and 2 tablespoons peanuts. Pipe strawberry cream into the gap between cake and bowl. Add the 6-inch layer, 3 tablespoons jam, about 1/2 cup peanut butter filling and 3 tablespoons peanuts; pipe cream into the gap again. Add the whole 8-inch layer, remaining 3 tablespoons jam, about 1 cup peanut butter filling and remaining 3 tablespoons peanuts. Fill the edge gap with strawberry cream.

  11. Set the whole 9-inch layer on top and press gently to secure. Fold the plastic over and refrigerate for about 1 hour, until the cream has set. Unwrap the top, invert onto a serving plate and lift away the bowl and plastic.

  12. Reserve 1/2 cup strawberry cream for decoration. Coat the dome with the remaining cream, smoothing with an offset spatula. Refrigerate uncovered for at least 1 hour and up to 8 hours. Just before serving, pipe the reserved cream over the cake and add optional freeze-dried strawberries or culinary edible decorations.

Instructions

Notes

This base recipe needs four cake pans: two 8-inch and two 9-inch. Changing the serving multiplier does not automatically change pan sizes or assembly portions.
Allow separate time for cooling and the two chilling stages; no short total time is listed.
Use any cake trimmings and extra filling separately. Keep the finished cream-filled cake refrigerated.
Decorative flowers must be edible and sold for food use; florist flowers are not suitable.

Build the air before adding flour

The long egg-and-sugar whisking creates the sponge structure. Keep the mixer low for the remaining additions and finish by folding any unmixed batter from the bottom of the bowl.

At the table

Serve in modest wedges with tea or coffee. Add the powdered sugar close to serving for a fresh finish.

The cooking plan

How to make Victoria-Style Sponge with Jam & Vanilla Cream.

  1. Heat the oven to 350°F with a middle rack. Line the bottoms of two 8-inch round cake pans with parchment; leave the pans ungreased.

  2. With an electric mixer and whisk attachment, beat the eggs, cake sugar, vanilla and cake salt for 10–15 minutes, until very pale and fluffy, about tripled in volume. The mixture should fall in a ribbon.

  3. On low speed, mix in the baking powder for about 1 minute. Add the flour and mix on low for about 1 minute; the batter will thicken.

  4. Meanwhile, warm the milk and butter in a small saucepan over medium heat for about 4 minutes, until the butter melts and the milk steams without boiling. With the mixer on low, gradually pour into the batter and mix for about 2 minutes. Fold with a spatula to make sure the batter is even.

  5. Divide between the pans, about 325 g per pan, and bake for 20–25 minutes, until golden and springy to a gentle touch. Cool in the pans for 10 minutes, then turn out onto racks, remove parchment and cool completely, about 1 hour.

  6. Stir the jam, lemon juice and measured jam salt together. In a separate bowl, beat the cream, 5 teaspoons sugar, pudding mix, vanilla and measured cream salt on medium speed for about 4 minutes, until medium-firm peaks form.

  7. Set one cake layer on a plate. Spread the jam over it, leaving a 1/4-inch border, then spread the cream to the edge. Put the second layer on top, upside down for a flat surface. Dust with powdered sugar and serve.
