Ingredients

See the ingredient checklist
  • 1 1/2 lb cod fillets, cut into 4 to 6 pieces
  • 2 tbsp olive oil, for searing
  • 1/4 cup fresh parsley, chopped
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra-virgin olive oil
  • 2 tbsp butter, melted
  • 5 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Before you cook

Use a thin spatula to turn the fillets in the skillet. The thickness of the cod determines how soon to check it in the oven.

How to make Baked Cod with Lemon and Garlic

  1. Heat the oven to 400°F. Mix the lemon juice, 5 tablespoons olive oil and melted butter in a shallow bowl. Set the minced garlic aside.

  2. Combine the flour, coriander, paprika, cumin, salt and pepper in a separate shallow bowl.

  3. Blot the cod dry. Dip each piece into the lemon mixture, then coat with the seasoned flour and shake off any excess. Keep the remaining lemon mixture for baking.

  4. Heat 2 tablespoons olive oil in an ovenproof skillet over medium-high heat. Sear the cod for about 2 minutes per side, just long enough to color the coating.

  5. Take the skillet off the heat. Stir the garlic into the reserved lemon mixture, then pour it over the fish. Transfer the skillet to the oven and bake until the cod flakes easily, checking before 10 minutes.

  6. Scatter the parsley over the fish and serve right away.
