How to make Sheet-Pan Miso Honey Salmon and Snap Peas

  1. Heat the oven to 425°F with racks in the upper and lower thirds. Toss the peas with scallion whites, 2 teaspoons sesame oil and 1/4 teaspoon salt. Drizzle the remaining oil on a sheet and spread the peas in one layer.

  2. Roast the peas on the lower rack for 10 minutes. Mix honey, miso and chili-garlic sauce. Salt both sides of the salmon.

  3. Move the peas aside and set the salmon skin side down in the center of the sheet. Brush with glaze and roast another 7 to 8 minutes, until the fish is cooked through and the peas are tender.

  4. Move the sheet to the top rack and broil 1 to 2 minutes, watching closely, until lightly charred.
