The cooking plan
How to make Loaded Sour Cream & Onion Waffle Fries.
Heat the oven to the temperature specified on the frozen waffle-fries package. Mix the buttermilk powder, garlic powder, dried parsley, sugar, salt, and onion powder in a small bowl. If the fries are already salted, start with less of the salt.
Toss the frozen fries with the olive oil and spread in one layer on a large rimmed baking sheet, using a second sheet if needed. Bake according to the package directions, turning as directed, until golden and crisp. The original timing guide is about 20–26 minutes, but the package and the fries’ appearance take priority.
While the fries bake, cook the bacon in a skillet over medium heat, turning as needed, until browned and crisp, about 10 minutes depending on thickness. Drain on paper towels and crumble when cool enough to handle.
Toss the hot baked fries with the dry seasoning, then spread them back on the baking sheet. Sprinkle with white Cheddar and cooked bacon. Return to the oven for about 2–3 minutes, until the cheese melts. Top with sliced green onions and spoonfuls of sour cream. Serve immediately.
